Who doesn’t like Autumn, with the beautiful weather and all the tasteful fruits and vegetables that it brings. One of my favorite is of course the pumpkin and because of what you can do with it in the kitchen, like this amazing Pumpkin Soup.
This recipe you can do with just a few ingredients and it won’t take much of your time. So let’s get started what are we going to need: pumpkin of course, onion, garlic, chicken or vegetable stock and cream.
First thing you need to do is choose the pumpkin, then we will peel, take of the seeds and cut the pumpkin in large chunks.
If you have the time and want you can roast the pumpkin in advance. Roasting the pumpkin along with veg provides it this yummy flavor which makes it option. It is the way should you enjoy a soup that’s extreme and extra-rich. Toss the cubes of pumpkin, loaf and other veg in oil, then throw in a couple of cloves of garlic and roast in the 180 C until the edges are darkened.
The garlic and onion are the ingredients that bring that special flavor to the soup. While you can cook your pumpkin in water the chicken or vegetable stock will give a more intense taste to the soup.
Finally we put the cream for that will make that soup really creamy, you can add milk if you don’t have cream, or just a scoop of butter.
Now all we need to do is top this amazing soup with some croutons and fresh herbs. I suggest you use homemade croutons because they’re so easy to make, you will need just three ingredients bread, olive oil and seasoning. Just combine the above mentioned ingredients and put in the preheated oven then cook for about 20 minutes until golden.
Delicious Pumpkin Soup
- 1 kg pumpkin
- 1 onion
- 2 garlic cloves
- 3 cups vegetable or chicken stock
- 150 ml double cream
- 2 tbsp olive oil
- salt and pepper
- First we cook the chopped onion and garlic in a large saucepan, in the preheated olive oil, for about 5 minutes until is soft.
- Now add the pumpkin and cook for another 10 minutes, but don’t forget to stir from time to time.
- Then add the vegetable or chicken stock to the saucepan and cook for 10 more minutes.
- Finally put the cream and bring to boil, then puree the soup with a blender.
